Spicy Thai Peanut Rice


  • 1 Tbsp. sesame oil
  • 1 cup thinly sliced red onion
  • 1 small jalapeno pepper, thinly sliced into rings
  • 3 cups cooked Village Harvest Red Rice
  • 1 Tbsp. soy sauce
  • 2 tsp. lime juice
  • 1/4 cup chopped basil
  • 1/4 cup coarsely chopped roasted peanuts


Heat oil in a large sauté pan over medium-high heat. Stir in onions and peppers and cook for 3-5 minutes, stirring occasionally, until lightly browned. Mix in red rice and soy sauce and cook until heated through. Remove from heat and add lime juice, basil and peanuts and season to taste with salt just before serving.
