Quinoa Taco Salad

INGREDIENTS

  • 1 Head Red Leaf Lettuce
  • 2-3 Cups Village Harvest Golden Quinoa, Cooked (1 Cup Uncooked makes about 2-3 Cups Cooked)
  • 1 Cup Black Beans
  • 1 Avocado, Sliced
  • 1 Cup Corn
  • 1/2 Cup Red Onion, Sliced
  • 1 Tomato, Sliced
  • 1/4 Cup Shredded Cheese
  • Catalina Dressing

INSTRUCTIONS

  1. Prepare your Quinoa if you have not already, typically 1 cup uncooked will make about 2-3 cups when cooked.
  2. Build your salad with the ingredients listed above starting with lettuce and topping with the dressing.
  3. Serve.
