Quinoa Blueberry Power Muffins

INGREDIENTS

  • 2 cups oat bran
  • 1 cup cooked Village Harvest Quinoa (follow cooking instructions on package)
  • 1/2 cup brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup 2% milk
  • 2 Tbsp. melted butter
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup blueberries

INSTRUCTIONS

Preheat oven to 425˚F.

Combine oat bran, quinoa, brown sugar, baking powder and salt in a large mixing bowl. Set aside.

Whisk together milk, butter, egg and vanilla in a separate bowl. Stir wet ingredients into dry mixture and fold in blueberries. Pour into a dozen lightly greased muffin cups and bake for about 15 minutes until lightly browned.
