
Mushroom Freekeh Burgers
INGREDIENTS
- 2 Tbsp. olive oil, divided
- 2 cups sliced mushrooms
- 5 cloves garlic, chopped
- 1 tsp. minced thyme
- 1/2 tsp. salt
- 2 tsp. balsamic vinegar
- 1 1/2 cups cooked freekeh
- 1/2 cup panko crumbs
INSTRUCTIONS
Heat 1 teaspoon of olive oil in a sauté pan over medium high heat. Add mushrooms and cook for 5 minutes until they begin to brown. Stir in garlic, thyme and salt and continue cooking until all moisture has evaporated and mushrooms are nicely browned and thoroughly cooked, approximately 3-5 minutes. Add balsamic vinegar and remove from heat.
Place cooked mushrooms, freekeh and crumbs in the bowl of a food processor and process for about a minute until mixture comes together and can be formed into 4 patties.
Heat remaining oil in a sauté pan over medium heat and cook patties on each side for 3-5 minutes until golden on the outside and heated through.
