
Caramelized Onion Quinoa
INGREDIENTS
- 1 Tbsp. olive oil
- 2 cups diced red onion
- 2 tsp. chopped sage
- 1 cup Village Harvest Quinoa
- 1 3/4 cups low sodium chicken broth
- 1/4 cup toasted almonds
- 1 Tbsp. chopped chives
- salt and pepper to taste

INSTRUCTIONS
Heat oil in a medium sized pot. Stir in onions and sage and cook over medium-low heat for 10 minutes, stirring occasionally. Pour in quinoa and chicken broth and bring to a boil. Turn heat down to low and simmer for approximately 25 minutes or until all liquid is evaporated. Mix in almonds and chives and season with salt and pepper to taste.
