Spicy Red Sriracha Quinoa

For the Sauce:

  • 2 TB Brown Rice Vinegar
  • 1 TB Coconut Aminos
  • 1 Tsp Minced Garlic
  • 1 to 2 Tsp Sriracha (plus more for topping)
  • ½ to 1 Tsp Chili Paste
  • ½ Tsp Ground Ginger
  • 1 TB Ketchup
  • 1 Tsp Sesame Oil
  • Toasted Sesame Seeds (for topping)

  1. In a large pot, cook the quinoa with the shallot, according to package directions.
  2. In the meantime, create the spicy sauce in a small bowl.
  3. Combine all sauce ingredients and mix together. Once the quinoa has absorbed all the water and finished cooking, fluff with a fork and pour in the spicy sauce.
  4. You can top each serving with toasted sesame seeds and additional sriracha if desired.
