Middle Eastern Spiced Quinoa

INGREDIENTS

  • 2 cups frozen Village Harvest Golden Quinoa, heated **Note: You can substitute 2 cups cooked quinoa; 1/2 cup dry, cooked according to package directions.
  • 1 cup diced zucchini
  • 1/4 cup diced red onions
  • 1/4 cup toasted cashews
  • 1/4 cup raisins or dried currants
  • 1/4 cup chopped parsley
  • 2 Tbsp. olive oil
  • 2 Tbsp. orange juice
  • 1 1/2 tsp. red wine vinegar
  • 1/2 tsp. chopped orange zest
  • 1/2 tsp. ground coriander
  • 1/2 tsp. kosher salt
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cayenne pepper

INSTRUCTIONS

Combine quinoa, zucchini, red onions, cashews, currants and parsley in a large bowl. Dress evenly with olive oil, orange juice, red wine vinegar, orange zest, coriander, salt, cinnamon and cayenne.
