Coconut Jasmine Rice With Mint


  • 1/2 Cup Water
  • 1 Cup Coconut Milk
  • 1 Teaspoon salt
  • 1 Cup Village Harvest Jasmine or Organic Jasmine Rice
  • 1/4 Cup Fresh Mint, chopped fine
  • 1/2 Cup Toasted Coconut Flakes


In a quart pan, combine the water, coconut milk and salt and bring to a boil.
Stir in Village Harvest Jasmine Rice.
Cover tightly and simmer at medium-low heat for about 18-20 minutes.
Remove from heat, keeping covered for 5 minutes. 
Fluff with fork and serve with the fresh mint and toasted coconut.
Season with salt and pepper.
