It only takes a bit to realize that Village Harvest Freekeh – a cracked green wheat- is roasted to perfection. Dating back to biblical times, this ancient grain is harvested while still young and green, at the peak state of taste and nutrition. Freekeh is densely nutritious, with high protein content and three times the fiber of brown rice. The inherent nutty flavor and chewy texture of freekeh make it the perfect grain for hearty salads, pilafs, or soups.
- Combine 1 cup of Village Harvest Freekeh with 2 ½ cups water in a pot and bring to a boil.
- Cover, reduce heat to low and simmer for 20 minutes or until all water is absorbed.
- Remove from heat, fluff with fork and serve. Makes approximately 3 cups of cooked freekeh.
