Get Creative with Quinoa

Just buying quinoa is conquering a big hurdle for most. The name is kind of strange. Your mother never prepared it when you were young. It just doesn’t pull at your heart strings. But people get over it when they realize how delicious and healthy it is and eventually it’s in the shopping cart. Once that mission’s accomplished, it’s just a matter of deciding what to prepare with it. Here are five fantastic ideas:

1. Stew: Stir quinoa into stew about 15-30 minutes before it is finished cooking. Not only will it add flavor and texture to your recipe, it will also thicken the broth.

2. Pilaf: Prepare a pot of fluffy quinoa and stir in toasted nuts, dried fruit and your favorite herbs and spices. You can also swap it in for rice in any of your favorite pilaf dishes, adding vegetables and meat as you wish.

3. Pancakes: Who doesn’t need a little extra kick in the morning? Add cooked quinoa to your favorite pancake batter for extra protein. Mix in mashed bananas and sprinkle with pecans to further the flavor.

4. Cookies: Mix quinoa into your favorite chocolate chip or peanut butter dough. In addition to being more nutritious, they’ll be fantastically crunchy and tasty too.

5. Salads: Sprinkle cooked quinoa over your favorite greens to make your salad heartier and healthier. If you just can’t get enough, just chill cooked quinoa and stir vegetables like cucumbers, cherry tomatoes and olives into the mix for a seriously healthy meal.
