Recipe: Snappy Santa Fe Brown Rice

Ingredients

  • 2 cups Village Harvest Red Quinoa & Brown Rice, heated through
  • 1 cup corn kernels, cooked
  • 1 cup canned black beans, rinsed and drained
  • 1 Tbsp. chopped cilantro
  • 1 Tbsp. toasted pine nuts
  • 1 Tbsp. lime juice
  • 1/4 tsp. kosher salt
  • 1/4 tsp. ground cumin

Instructions

  • Combine Red Quinoa & Brown Rice, corn, beans, cilantro and pine nuts in a large mixing bowl. Toss with lime juice, salt and cumin.
