Recipe: Lemon Asparagus Rice Medley

Ingredients

  • 2 cups Village Harvest Rice Medley*, heated through
  • 2 cups sliced asparagus
  • 1 Tbsp. lemon juice
  • 2 tsp. olive oil
  • 1 tsp. chopped tarragon
  • 1/2 tsp. chopped lemon zest
  • 1/4 tsp. kosher salt
  • 1/8 tsp. ground black pepper

Instructions

  • Combine rice and asparagus in a large mixing bowl. Toss with lemon juice, olive oil, tarragon, zest, salt and pepper.
  • *Yes, any of them will work!
