Recipe: Easy Apricot Rice Medley

Ingredients

  • 4 cups Village Harvest Rice Medley, heated through
  • 1/2 cup chopped dried apricots
  • 1/2 cup lightly salted cashew halved and pieces
  • 2 Tbsp. chopped parsley
  • 1 1/2 Tbsp. cider vinegar
  • 1 Tbsp. olive oil
  • 1/2 tsp. kosher salt

Instructions

  • Toss rice with apricots, cashews and parsley. Mix in vinegar, olive oil and salt. Serve warm or room temperature.
