Recipe: Coconut Lime Basmati Rice

Ingredients

  • 1 Cup Coconut Milk
  • 1/2 Cup Water
  • 2 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Sugar
  • 1 Pinch Salt
  • 3/4 Cup Village Harvest Basmati or Organic Basmati Rice
  • 1/4 Cup Chopped Fresh Cilantro

Instructions

  • Bring coconut milk, water, lime juice, sugar, and salt to a boil in a saucepan over high heat.
Stir in rice, cover, reduce heat to low, and simmer until liquid is absorbed, about 20 minutes.
Remove from heat, let stand 5 minutes, then fluff with a fork and stir in cilantro.
